Under the Straw Hat is a side task in the 
Kuttenberg region of Kingdom Come: Deliverance 2. It is an auxiliary and missable task specifically tied to the side quest 
In Vino Veritas.
This tasks starts when asking for work at the vineyard and completing full day at the vineyard is needed to get legal access to the secret Casper Rudolf wants.
How to start Under the Straw Hat
This task is only available during In Vino Veritas. You cannot be hired for vineyard work at any other point in the game.
To begin, travel to the large vineyard located north of Kuttenberg City and speak to the guard/recruiter at the gate. Inform him you are looking for employment, and he will direct you to Administrator Jerome, the caretaker.
Work at the Vineyard
Locate Jerome within the vineyard grounds.
He will explain the grueling nature of the work and provide you with a place to sleep (a hut on the grounds). If you arrive late in the day, he will instruct you to start fresh the next morning at 6:00 AM.
While you are “employed,” the interior of the central building is no longer considered a private area for Henry. This is the perfect time to explore the main house to find items or information required for the In Vino Veritas quest, as the staff will largely ignore your presence.
The workday officially runs for 12 in-game hours, from 6:00 AM to 6:00 PM. Your primary responsibilities include:
Picking Weeds
You must walk between the rows of vines and interact with the thistle growing there.
Carrying Sacks
Sacks of collected weeds appear in three or four fenced designated dumping areas, mostly in the western part of the vineyard. You must pick these up and carry them back to the dumping ground located near your sleeping hut. The sacks don't respawn and there are several hidden along the vineyard paths - only on the paths.

Shortcut - How to skip work
This side quest wants you to do the tasks for 12 in-game hours. Jerome, however, doesn't always keep an eye on you, so you can cleverly and cautiously skip time.
Pick one small brush or weeds or carry at least one sack.
Skip time by exactly one hour.
Repeat this cycle until 6:00 PM (18:00).
Do not skip past 6:00 PM (18:00). If you are not present to speak to Jerome immediately when the workday ends, he will consider you a slacker and fire you, resulting in a failed task.
At 6:00 PM, your objective will update. Locate Jerome immediately to collect your pay.
Good Outcome
If you have done sufficient work, Jerome will pay you 5 Groschen and express his approval.
Bad Outcome
If you skip too much time without working or fail to report to Jerome by 6:00 PM, you will be fired.
While you can still attempt to finish In Vino Veritas through stealth, you will lose the cover of a legitimate worker and the small monetary reward.

Does the main house stay accessible?
While employed, the central building interior is treated as non-private for Henry, which helps the wine quest.
